It is a happy and beautiful day indeed and even better knowing they won!
Husband gets home earlier than me most days since he starts wayyy early, so it was awesome to come home to a meal almost ready and an early dinner which led to the ability to go for a drive before the sunset. Just livin' the dream, folks.
Since I had already picked out this recipe and bought all of the ingredients, he was happy to help! Note to self: Meal plan more often.
So back to the meal. This turned out to be a great quick weeknight meal that was filling and provided plenty of leftovers for lunch the next day. We love a good hearty one-pot meal that also includes some delicious greens (and MEAT), so this was a great meal that could be added to the rotation (if I had a rotation, that is).
So grab your lover and friend and a big ol' pot of pasta and enjoy this extra daylight we're having!

What You'll Need:
8 oz shell pasta
3 cups broccolini, cut into 1" pieces
2 T olive oil
12 oz package cooked chicken sausage links, cut into 1/2" thick slices
1 small onion, coarsely chopped
3 cloves garlic (or more if you're like us and looove your garlic), minced
1 cup chicken broth
1/2 tsp salt
1/4 tsp pepper
1-2 cups arugula
1/4 cup snipped fresh dill
1/3 cup grated Parmesan cheese
crushed red pepper
extra olive oil
In a dutch oven, cook pasta according to package directions, adding the Broccolini the last 4 minutes of cooking time. Drain, rinse with cold water and drain again. Set aside. In a 12" skillet, heat oil over medium-high heat. Add sausage, onion and garlic. Cook, turning occasionally, until sausage is browned, about 3 minutes. Add pasta mixture, chicken broth, salt and pepper. Heat through. Add arugula and dill. Remove from heat; toss to wilt greens. Divide among shallow bowls and sprinkle each serving with Parmesan cheese. Drizzle with a little olive oil and sprinkle with crushed red pepper, if desired.
