How to Save Your Greens {Green Cubes}
We eat a lot of greens in this house.
Between our smoothies in the mornings, sandwiches at lunch, and somehow incorporated into dinner, we go through them fast. I tend to buy a lot at our local farmers market or at my favorite place, (Costco!), and although we can usually power through them no problem, there are weeks where we don't.
Ever have those weeks where you end up not being home as much, too busy to make your smoothie in the morning, or you end up heading out of town last minute? Is that just us? A few weeks ago, we did not even get close to finishing off our kale and spinach for the week and we had a ton left that was going to go bad if we didn't eat them fast.
I hate wasting food, so I thought I would try freezing them. I've tried freezing spinach whole before, and it didn't go so well, so I thought I would freeze it ready to go for my smoothies...in ice cubes! I mean, smoothies are meant to be made out of frozen things, and sometimes I only use fresh ingredients, so this would be perfect to give it that cold consistency the perfect smoothie has.
Plus, this meant I got to blend it. And if you know me, I really like blending things. Mainly because I have a Blendtec. Greens...will it blend?
My handy dandy cell phone was able to capture the process. Since grains have no weight to them, it's easier to add some water so that it will weigh it down and mix it better. Try not to blend too much at a time either so it doesn't get overly packed.
Then poor it into ice cube trays and freeze over night.
I stored mine in bags with the type of green and the date. I separated them, but I think from now on I might just mix whatever greens I have since it will be for smoothies and I usually use multiple greens anyway.
They worked great and now I can make sure to put something green in my smoothie even if I run out of the fresh stuff.
And, nothing goes to waste!
