Tasty Tuesday {Banana Chocolate Chip & Craisin Oatmeal Muffins}


My baby sis is back in town for the summer and she is inspiring me.  When I came back from college and had my first full time, 9-5 job in the city, I came home exhausted every day, ate dinner, and went to bed.  I was boring and lame to say the least.  Jamie, on the other hand, gets up early and works out every day, comes home and cooks, works on projects, and does all sorts of things.  I don't know how she does it.

When I was over one evening after dinner, we decided to make these muffins that she found via Pinterest.  She had made them before and loved them, so I really wanted to try them, too.  They're super easy, have all basic ingredients, and can be altered to make all sorts of combinations.  We added craisins to the original recipe and next time we make them we are going to try different flavors like blueberry or coconut.  They're delicious and a great quick breakfast to grab and eat on your commute.

Also, that photo above?  We had a contest on who could take the best photo of the muffin with their cell phone and guess who won?  My mom.  It must be all of those food magazines and shows she's watching...she just has that eye, I guess!


Banana Chocolate Chip and Craisin Oatmeal Muffins

Ingredients:
3 cups old-fashioned oats
1/2 up packed brown sugar
2 tsp. baking powder
1/2 tsp salt
2 egg whites
1 egg
1 1/4 cup skim milk
3/4 cup mashed bananas
1 tsp vanilla extract
1/2 cup semi-sweet chocolate chips
1/4 cup craisins

Preheat oven to 350.  Lightly mist 18 cups in a muffin tin with cooking spray.  In a medium bowl, combine the oats, brown sugar, baking powder and salt in a large bowl and stir until thoroughly mixed. In a separate bowl, whisk together the egg whites, egg, mashed banana, milk and vanilla.  Add to the dry ingredients and stir until blended together.  Mix in the chocolate chips and craisins.  Spoon the oatmeal mixture evenly between the prepared muffin cups.  Bake uncovered for 18-22 minutes or until oatmeal is lightly browned and a toothpick inserted into the middle comes out clean.

Eat with yogurt and fruit or for a quick on-the-go breakfast!

Makes approx. 18 muffins
