You guys, this is the best snack ever. It's just as addicting as a salty potato chip, but so much healthier.
My brother-in-law taught me how to make these a while ago and husband and I made them often because they were so easy. Seriously, minus the washing and drying of the kale, it is so fast and easy, you can make it on a whim (why do I find washing produce so tedious? It's honestly, one of my least favorite things).
The only problem with this snack is that a head of kale will not seem like enough. It's crazy how you can eat an entire head of kale in one sitting and still want more. It's that good!
This is also a great way to use up your greens if you are leaving town and it would go bad otherwise. Another fabulous way to not waste good produce!
Kale Chips
1 head of kale
salt to taste
2 T olive oil
Preheat oven to 350*. Wash and thoroughly dry kale, then cut into bite size pieces (about 1.5"). Toss with salt and oil in a bowl. Lay out on a baking sheet in a single layer and bake for approximately 20 minutes, tossing halfway through. Keep an eye on it, because it may bake differently depending on your oven. You want it to be crunchy, but not burnt.
