Hola!
Last week was my mama's birthday and my sisters and I threw her a little Fiesta!
Complete with enchiladas and mustaches!
My sisters were in charge of the food and I was in charge of the decorations.
First, meet my sister, Kelly (she's the one on the left). She is an amazing mother to her sweet daughter, Eva, husband to my bro-in-law, Jordan, and an incredible cook. She has received many "how do I make this" calls from me and I always know I can trust her cooking/baking advice.
Did I mention she makes amaaazing cheesecakes? Maybe one day she'll guest post one of her recipes...now I'm salvating.
Anyways, she was in charge of the menu.
We started off with some fresh veggies...
...some chips and homemade guacamole...
...and homemade mango salsa...
...which I think I devoured most of it by myself.
Oops.
For dinner, she made some incredible enchiladas that I don't have a picture of because it was devoured in approximately 4.785 seconds after it was taken out of the oven.
Some mexican rice made by my sister-in-law (missed a picture of this!).
And a festive salad made by my other sister...
Isn't it pretty??? Mmm...more avocado!
Oh and we served the food like this...
Because everyone wants their own min-sombrero and a mustache on their cup, of course.
That's the birthday lady and my dad enjoying the delicious food. Cool hat, dad!
Dessert was next.
Dessert was highly anticipated.
My sister really out-did herself with this.
She made dessert tacos.
Yes.
You heard me.
Dessert tacos loosely based on this recipe.
First you take the sugary, toasty shell...
And you fill it with this yummy goodness (the whipped cream and chocolate sauce was homemade)...
It may end up looking like this...
So you put a sombrero on it and call it good.
It was soooooo yummy!
I want it again.
Cinco de Mayo maybe?
Or perhaps every day? I don't know...
Anyways, it was a hit and everyone loved it.
You know what else was a hit? My brother-in-law's homemade Horchata (Pronounced or-CHA-Tah! With your hand waving in the air)!!
As for my decorations? They were simple but colorful.
Some bright flowers, mini sombreros, mustaches, maracas, a blanket from Mexico for the table, bright balloons, and a colorful banner I made from tissue paper.
I was happy with it. Simple, but festive.
And you know we had some fiesta-appropriate music going on in the background.
My niece, Eva, loved it. She was dancing all afternoon.
Everyone had a great time, too. The weather was gorgeous so we all played outside.
Corn Hole, Family, Sunshine. It was a wonderful day.
