{Tasty Tuesday: Stuffed Bell Peppers}


To be honest, I didn't really want to post this recipe.

The pictures didn't look right.

The proportions weren't right.

And I just wasn't totally convinced it was "Tasty Tuesday" ready.

But here I am, posting about things I didn't plan on posting about once again.

Because here's the deal:  I kind of made this up.

I am not a chef.  And I'm definitely not the wonderful wife that just whips something up without detailed instructions.  Trust me when I say, I don't make up recipes...yet.

Since we're kind of on a tight budget and I'm trying to save every dollar I can, I just couldn't follow any recipes considering I didn't have the majority of the ingredients.  I did look at a ton of recipes online and got a general gist of how to make stuffed bell peppers, but after that, I just started adding things. 

I made way more filling than I needed, but it has served as great leftovers, so I'm not complaining too much. 

So here it is, folks, in all its messiness, non-perfect glory...my first recipe...

Stuffed Bell Peppers

What You'll Need:
Any color bell peppers (as many as you'd like)
1 lb ground turkey
1 can tomato sauce
1 can diced tomatoes
1 can tomato paste
Celery, chopped
Yellow Onion, chopped
Spinach
Monterey Jack Cheese, shredded
Salt and Pepper

1.  Cut off the tops of the bell peppers and put aside.  Blanch the rest of the pepper (throw them in boiling water for 3 minutes, then shock them by putting them in a bowl of ice water).

2.  Brown the turkey meat with some salt and pepper, the yellow onion, and the celery.  Don't worry about cooking the meat all the way, it will continue to cook throughout the rest of the process.




3.  Add the tomato sauce, tomato paste, and diced tomatoes.  Chop up the tops of the bell peppers and add them to the mix.  Let simmer for about 15 minutes.  

4.  Preheat oven to 375 degrees F.

5.  When filling is almost done simmering, add as much spinach as you would like. 





6.  Fill the bell peppers with the mixture.  Place the filled bell peppers in a baking dish and bake for about 20 minutes.  Then add the shredded cheese to the top of each pepper and bake for another 5 minutes.

7.  Eat and enjoy.  :)









Thank you for being so forgiving.  I'm sorry there aren't exact measurements, it will all just depend on how many peppers you are making.  I hope you enjoy it!
