Have you ever had rice paper? It's kinda funny. It doesn't really have much taste and the texture is kinda weird, but it oddly holds everything together without ripping.
It's made with tapioca, filtered water, rice flour and salt. That's it! Plus, it's a great low-calorie substitute. The funny thing is, tortillas were the low-calorie substitute for sandwiches and burgers, and now it's just down to rice paper? What's next? I guess we can call that a salad...
But moving on, I had never had rice paper before a couple months ago. Since husband and I wanted to get each other paper gifts for our anniversary, I thought it would be fun to try out rice paper for lunch. We were camping and it ended up working out really well for us.
You can put anything you want in it, it's just a tortilla substitute for wraps, but I wanted to share with you what we used because it was super yummy.
So here you go!
Veggie Rice Paper Wraps with Peanut Sauce
What You'll Need:
A few sheets of rice paper
Peanut Sauce (I used this one)
1 cup brown rice
1 cup broccoli slaw
A handful of Craisins
Some mint leaves
1. First, prepare the veggie mix: Make the rice, then add the broccoli slaw and peanut sauce to warm it all together. Set aside.
2. Prepare the rice paper: Dip one sheet into warm water for 5 seconds and then lay it on a flat surface.
3. Assemble the wraps: Put a scoop of your veggie mixture in the middle of the paper. Add some Craisins and a couple mint leaves. Wrap!
4. Eat and repeat! Trust me, it's delicious.
