So guess what.
I haven't posted for Tasty Tuesday in two and a half months! Yikes! Way too long. It's time to get this thang started again!
I actually made this tonight (hense why the lighting is horrid and this post is so late), but let's forget about that for a moment and focus on what's for dinner.
Veggies.
Potatoes.
Quinoa.
That's it. I totally forgot to defrost some sort of protein, but then I realized quinoa is packed with protein and we had lots of fresh veggies that were so colorful and delicious-looking, I just wanted to put it all together and eat it. One dish meals - the best, right?
So being inspired by this dish, I did it. And it was yummy. And we're going to do it again.
It was a meal that was totally filling, but felt light at the same time. I'm all about that. Plus, it didn't take very long at all, so when you're not prepared to make something for dinner, this is a great last minute dish.
And it's oooober healthy, so you can eat as much as you want (that's how that works, right? :) ). Or pack the leftovers for lunch tomorrow like husband and I are doing. Bonus! The best part is that there is total freedom to add whatever you would like or have on hand. The ingredients I have listed are what we had in our fridge, but whatever you have will most likely work, too! It's a great way to use what you have before it goes bad.
After you try it, I'd love to hear about your creations! Let me know what worked and maybe what didn't. I know most of you are way more experienced in the kitchen than I am, that's for sure!
Veggie Quinoa Bowls
Ingredients:
Quinoa
Sterling potatoes (they are small and cook faster)
Lots and lots of veggies of your choice (I used: carrots, bell peppers, onion, spinach and cilantro)
Lemon slices
Minced garlic
Salt and pepper to taste
Instructions:
Cook the quinoa according to the package. Set aside once it is done. Chop all of your vegetables, potatoes and whatever else you are adding and place in a heated pot with olive oil in the order of cooking time. I started with just my potatoes (add some salt and pepper), then the onion and carrots, garlic, bell peppers, lemon slices, and finally the spinach. Place quinoa in bowls, add the veggie mix, and top with cilantro or anything else you would like.
Get creative! You really can do whatever you want with this. Next time, I think I would add more lemon and maybe some jalapeno to give it a little kick.

Woo hoo! So glad you're back at it for tasty Tuesday! I knew making my own tt post would somehow help! That dish looks really good, I'll have to try it soon, even if billy won't touch half the veggies.
