My mother-in-law and my mom at Bart's 28th birthday party last weekend |
My mother-in-law is awesome. She is one of the most sincere and loving women I know. She will do anything for everyone and
she puts her whole heart into everything.
For husband’s family birthday dinner last week, I wanted his
parents to be able to just come and relax and enjoy the party. I didn’t want them to have to work or
prepare too much for it – I just wanted them to celebrate their son and have
fun.
But, since everyone was contributing a little bit to the
menu, I asked her if she could bring a green salad to go with the St Patrick’s
Day “green” theme. I thought it
would be easy and minimal work for her. I expected some lettuce or
spinach, bell peppers, cucumber, and maybe
some green onion.
You guys, this woman is incredible. She made a “plain” request into
something FABULOUS. This salad was
in fact all green, so to a chef, it may not have looked the part since it didn’t
have all the colors of the rainbow in it, but it was quite possibly the best
salad I have ever had. It. Was. So. Good.
I need to share it with you.
Don’t even worry that it’s all green. You’ll get over that once you take a
bite.
OH! And today is her birthday! Happy Birthday to my MIL! Love you so much!
