Tasty Tuesday {Green and Everything Green Salad}

My mother-in-law is awesome.  She is one of the most sincere and loving women I know.  She will do anything for everyone and she puts her whole heart into everything.  

For husband’s family birthday dinner last week, I wanted his parents to be able to just come and relax and enjoy the party.  I didn’t want them to have to work or prepare too much for it – I just wanted them to celebrate their son and have fun.

But, since everyone was contributing a little bit to the menu, I asked her if she could bring a green salad to go with the St Patrick’s Day “green” theme.  I thought it would be easy and minimal work for her.  I expected some lettuce or spinach, bell peppers, cucumber, and maybe some green onion. 

You guys, this woman is incredible.  She made a “plain” request into something FABULOUS.  This salad was in fact all green, so to a chef, it may not have looked the part since it didn’t have all the colors of the rainbow in it, but it was quite possibly the best salad I have ever had.  It.  Was.  So.  Good.  

I need to share it with you.  

Don’t even worry that it’s all green.  You’ll get over that once you take a bite.  

OH!  And today is her birthday!  Happy Birthday to my MIL!  Love you so much!


Debbie’s Green and Everything Green Salad

The Fixin’s:

Bibb lettuce
Green bell pepper
Okra Pickles, mild-sliced up (Talk O'Texas brand from Safeway)
Salad Olives, green (Mezzetta brand from Safeway)
Asparagus
Cucumber
Celery
Avocado
(As you can see, she also put tomatoes on the side even though they aren't green)
 

1 cup mayo
1 cup green onions, white & green parts (about 6 or 7 green onions)
1 cup chopped basil leaves
1/4 cup fresh squeezed lemon juice (about 2 lemons)
2 teasp chopped garlic (2 cloves)
2 teasp anchovy paste----(I omitted this)
2 teasp kosher salt
1 teasp ground black pepper
1 cup sour cream
3 heads Bibb lettuce, broken up
2-3 tomatoes
 
Dressing:  Place mayo, green onions, basil lemon juice, garlic anchovy paste, salt and pepper in blender and blend till smooth.  Add sour cream and process just until blended.  If not used immediately, refrigerate dressing till ready to use.
