Tasty Tuesday {Spicy Honey-Brushed Chicken Thighs}

I'm usually really good about taking my own photos, but my cell phone photo of this dinner was just not doing it for me.  I have been pretty lazy recently when it comes to photos.  I don't know if it's because my phone camera is just so accessible, or because I just really want a fancy DSLR to take super awesome photos.  Either way, today you get the professional photo from the Cooking Light website because it actually makes it look as pretty and delicious as it was.


This was a crap-it's-six-oclock-and-i-have-no-idea-what-to-cook kind of night.  I had some chicken in the fridge and some veggies to go with it, but I didn't want to just have some boring and plain chicken for dinner.  My good friend, Google, came to the rescue and found this for me.  Yes, I was even too lazy to Pinterest it.  Whatevas.

I'm pretty stoked about my find, though, considering this recipe was actually super easy, tasted really good and used ingredients I always have on hand.  I made sure to pin it for later, too.

Anywho, here's some darn good chicken with a little kick for ya.  It's a great choice when you're in a pinch (which happens more often to me then I'd like to admit).  


Ingredients:

2 tsp garlic powder
2 tsp chili powder
1 tsp salt
1 tsp ground cumin
1 tsp paprika
1/2 tsp ground red pepper
8 skinless, boneless chicken thighs
Cooking spray
6 T honey
2 tsp cider vinegar

  1. Preheat broiler.
  2. Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
  3. Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.
