...On Keeping Our Vows {& Tasty Tuesday!}.

He vowed to be a Giants fan with me and I vowed to allow time for him to surf.

This life we're living?  We're just trying to keep our vows to each other.

It's nothing special, it's just doing life together.  We definitely aren't experts, in fact, we're rookies at this whole marriage thing.

But so far it's been pretty darn awesome.

We get to do life together.  Everything that comes with it is just a bonus.

Oh!  And it's Tuesday, so I'm gonna leave you with some healthy comfort food (that's right, healthy comfort food.  It's possible, people.) that I got from here.


Slow Cooker White Chicken Chili

What You'll Need:
1 lb. boneless, skinless chicken breast (cut into big chunks)
1 (16 oz) can diced tomatoes
 16 oz of Great Northern white beans
1 (4 oz) can fire roasted green chiles
2 medium onions, diced
6 cloves of garlic, minced
1 T extra virgin olive oil
¼ cup chili powder
2 tsp cumin
1½ cups chicken stock
1 cup shredded cheese


1.  Sauté the onions and garlic in a pan with the extra virgin olive oil until the onions are translucent.

2.  Put the tomatoes, chicken, beans, chiles, chili powder and cumin into the slow cooker. Once the onions and garlic are cooked, add them with the chicken stock to the chili.  Stir well.

3.  Cook the chili for 3-4 hours on high or 6-8 hours on low.

4.  About an hour before serving, add the cheese.

5.  Serve with any toppings you want.  Husband and I added some cilantro and Greek Yogurt and it was super yummy!

**The chicken shreds really easily once it's done cooking, so you can serve the chili with forks and shred individually, or you can keep the chicken in whole pieces and shred it all when it's done and add it back to the chili.

  3. Lizzie, I know, it has been so warm for fall! I have been dying for some soups so I just made it anyway! Luckily, our apartment is freezing all year long so we can handle warm meals any time!
