Another fail, I didn't make this recipe. Oops. That seems to be the trend with me lately. Someone else makes something tasty, I take pictures, and brag about how tasty it was. The whole purpose of Tasty Tuesdays was to keep me accountable in learning to cook, be creative in the kitchen and to stretch myself into something that was once unknown.
Cassie - get your act together!
I promise, you guys, I'm going to reeeeally try and get better at posting more regularly around here. I feel so much better when I do. It's been the perfect place for me to let out a creativity in me that I had been harboring for so long and I need to get better at nurturing that.
So, starting next week (since I will be leaving on a trip tomorrow), I am going to be more committed to MJ&PB. I am excited about it and it's going to be good for my soul.
BUT, for now, I have a delicious and easy recipe for you to get excited for summer. I'm not sure about you, but we've been enjoying some 80* weather and the BBQing has begun!
Have you ever had BBQ cucumber before? Not zucchini, but cucumber. I was totally weirded out by the concept, but after tasting the ones my bro-in-law Q'd up, I am forever hooked. They were so good! It's sort of like a pickle, which, makes total sense, so if you like pickles, you will definitely like these.
Happy almost summer and cheers to long days, swimming and tanning by the pool, and BBQing every chance we can get!
BBQ'd Cucumber
What You'll Need:
Cucumber, sliced
A couple tablespoons of Sweet Baby Rays BBQ Sauce
Minced garlic
Pepper to taste
Toss all ingredients in a bowl and BBQ for a few minutes on each side. Serve with other BBQ'd veggies, steak and potatoes!
Kid approved. :)
